Apricot Chicken Oriental

1 lb boneless skinless chicken breast1 cup sugar free apricot preserves1 cup water6 tbsp lite soy sauce1 can (8 oz) sliced water chestnuts, drained and liquid reserved1/4 cup dried apricots, diced1 tsp ground ginger1 tsp garlic powder3 ribs celery, sliced2 cups sliced mushrooms1 cup pea pods1 green bell pepper, cut into strips
1. Preheat oven to 350.
2. In a medium pot over low heat, combine preserves, water, soy sauce, liquid from water chestnuts, apricots, ginger, and garlic powder. Simmer until bubbly, stirring constantly.
3. Place chicken in a medium size baking pan, sprayed with cooking spray. Pour over chicken. Sprinkle celery, pea pods, water chestnuts, and bell pepper over top. Cover with aluminum foil.
4. Bake for 30 - 40 minutes, or until chicken is cooked thru and vegetables are tender.
