Somen Noodles with Pork and Vegetables

Ingredients
4 oz (dry) Somen Noodles3 tsp Vegetable Oil8 oz Thinly sliced Pork Loin (trimmed of fat)1 Clove Garlic2 Scallions, thinly sliced1 Cup Fresh Peas1 Cup Napa Cabbage2 Tbs Soy Sauce¼ tsp Freshly Ground Black Pepper
Directions
Cook noodles in boiling water for three minutes. Rinse and cool.
Heat wok over high heat, add 2 tsp oil. Add pork and garlic. Stir fry for for 3 minutes, then remove from wok.
Reheat wok and add remaining tsp of oil. Add remaining vegetables and stir fry for 1 minute.
Add pork and noodles and stir fry until all is heated through.
Remove from heat and serve. Approx 1.5 cups/serving.
