Smoked Salmon and Cream Cheese Frittata

1 1/2 cups Egg Substitute2 tablespoons lowfat milk1 tablespoon chopped fresh dill1 teaspoon kosher saltGround black pepper to taste2 tablespoons chopped chives2 ounces lowfat cream cheese2 ounces smoked salmon2 teasppons olive oil
Move rack in oven to the center and preheat oven to 375 degrees.
Whisk the eggs, milk, dill, salt, pepper, and chives together in a bowl. Separate the cream cheese into small clumps by using two spoons or your fingers. Fold the cream cheese and salmon into the egg mixture.
Heat the oil in a medium non-stick skillet over medium-low heat. Pour the egg mixture into the skillet, and stir lightly to make sure the fillings are evenly arranged in the pan. Cook until the bottom is set, but not brown, about 2 minutes. Transfer the skillet to the oven and bake until the tops is set, about 8 minutes. Remove from the oven, cover, and set aside for 5 minutes.
Invert the frittata onto a large plate. Cut into wedges and serve warm or at room temperature.

I made this with a variation. I use a Grilled Salmon Fillet and Made a topping with Grilled Onoin , Then Adding Tomato, Letting it Cool and the Adding Some Fat Free Cream Cheese and Spice. I Put this Topping on Top of the Salmon and Placed it under the Broiler untill just bubbly...Yum..Very Healthy - 1/8/08
