Thai Mango Salad

Ingredients
2 firm mangos, grated (julienned is better)0.5 cup bean sprouts1 green onion, diced1/4 red pepper, thinly sliced0.25 cup snow peas2 tbsp chopped fresh cilantro1 lime, squeezed1 tbsp fish sauce (omit for vegetarian)0.5 tbsp cashew nuts Chili flakes
Directions
Grate the mangos. Add the diced onion, bean sprouts, red pepper, snow peas and cilantro. Add fish sauce and squeezed juice of lime. Sprinkle with chili flakes to make it spicy. Toss. Top with cashews. This should make 4 servings of approximately 1 cup.

    I just made this & LOVE it! Made a double batch for a potluck tomorrow, & because I julienned the mangos (which were verging on ripe) instead of grating, it took QUITE a while. But the deliciousness makes it all worthwhile! - 3/17/12

    This sounds good, and I think I'll make it with our dinner tonight, but I'm going to sub the fish sauce with a Thai dressing that I have that has much less sodium. Love Thai food, but the sodium is killer for me!! :-) - 5/4/08
