Vickie's Oatmeal Breakfast Cakes

2 eggs1 tsp Vanilla2 cups applesauce (unsweetened)1 Banana (mashed)1 1/2 tsp stevia powder3 cups rolled oats2 cups steel cut oats1/4 falxseed meal1 tbl cinnamon1 tbl baking powder1tsp salt2 1/2 cups non-fat milk1/2 cup sliced almonds1/2 cup raisins1/2 cup dried cranberries1 tbl Almond Flour
Mix together eggs, vanilla, applesauce, banana, and stevia.
In a separate bowl mix oats, flaxseed meal, cinnamon, baking powder & salt. Then slowly add to the wet ingredients. then add in the milk.
In a separate bowl mix the almonds, raisins & cranberries with the almond flour, then fold into oat mixture.
place in lined baking muffin tins.
Bake for 30 minutes or until toothpick comes out clean.
Serving Size: makes 24 muffin cakes
