Tilapia Almondine

Ingredients
1 tilapia filet1T all-purpose flour1T Smart Balance cooking oil1-1/2T butter1/2 lemon1T sliced almonds
Directions
Coat filet on both sides with the 2T of flour. Add 1T cooking oil to a small frying pan on medium heat. When oil is hot, add filet and cook for approximately 3 minutes, turning once half way through cooking. Check thickest part of filet for doneness (fork easily goes through filet when done). Remove filet to a plate. Loosen any browned flour still in pan and add 1.5T of butter. While butter is melting, add the juice from 1/2 lemon and the tablespoon of sliced almonds. Cook mixture for a minute or so, then pour over the filet. Enjoy.
