Oriental Mix (Egg Roll Filling)

Ingredients
1 Cup Chopped Onion3 - 4 ribs Finely Chopped Celery (approx. 1.5 Cup)1 Small - Med Zucchini, Cubed4 - 5 Carrots, cut in small pieces2 C. Chopped Cabbage2 C. Bean Sprouts3 C. Fresh Spinach Leaves2 Eggs, Scrambled1 Lb. Ground Turkey2 C. Chicken Boullion1/4 C Low Sodium Soy Sauce1 T. Brown Sugar 1 T Olive Oil1 T Canola Oil1 T Sesame Oil
Directions
Pour oils together and add gradually as needed throughout cooking process. Use large deep frying pan or 5 qt. cooking pot. Fry onions until clear, add celery, carrots. Cook until tender. Gradually add Zucchini, Cabbage, Bean Sprouts, continue cooking until tender, add spinach - cook until spinach is wilted. In a separate pan, scramble eggs - chop up and set aside. Fry ground turkey and chop up as finely as possible. Set aside. Add chicken boullion, soy sauce and brown sugar to vegetable mixture. Add egg and ground turkey. Serve and enjoy.
