Raw Waldorf Salad

2 fuji apples3 celery stalks1/2 cup golden raisins, soaked and drained1/4 cup dried cranberries2 cups pineapple1/2 cup green grapes, halved1/2 cup walnuts2 tbsp walnuts1/4 cup chives1 carrot, grated1 tbsp honey mustard2 tbsp apple cider vinegar2 tbsp olive oil2 medjool dates1 tsp salt1-2 tbsp water
In a large salad bowl combine apples, celery, raisins, cranberries, pineapple, grapes, 1/2 cup of walnuts, chives and carrot.
In a high speed blender or a small chopper combine dressing ingredients - 2 tbsp walnuts, sweet mustard, apple cider vinegar, olive oil, dates, salt and water. Blend until smooth.
Pour dressing over the salad and mix well.
Serve immediately.
Serving Size: Makes 2 Servings (about 7 Cups)
