Low Fat Lemon Poppyseed Muffins

Ingredients
3 cups white flour4 tsp baking powder1/2 tsp salt3/4 cup sugar1/8 cup poppyseeds2 egg whites1 egg2 lemons1 cup milk1/4 cup oil
Directions
Put lemons in a small pot and just cover them with water. Boil for about 10 minutes or so. Remove them from the water, cut in half and remove seeds. Puree entire lemons in a food processor until you have a paste. There will be some small lemon peel pieces remaining.

Put dry ingredients into a large bowl and stir. Beat egg whites and egg until slightly foamy. Add to dry ingredients. Add remaining wet ingredients and lemons to dry ingredients and stir until all ingredients are mixed. Batter will be lumpy.

Pour batter into muffin tin and bake at 350 for 20 minutes or until just starting to turn golden.
