Mixed Bean Medley

Ingredients
1 tbsp. olive oilI onion, finely choppedsea salt and ground black pepper2 cloves garlic, finely chopped4 thick stropes of bacon, or 125g pancetta cut into smallcubespunch of crushed hot pepper flakes2 tsp dried oregano2 x 15oz (425 g) mixed beans drained and rinsed 1 3/4 cup pale ale3 3/4 cup hot vegetable stock
Directions
1) Heat oil. Add onion and salt. Cook approx. 5 mins. Stir in garlic, and cook 30 secs.
2) Increase heat slightly, add bacon. Cook until golden. Drain excess fat. Sprinkle with pepper flakes and oregano. Stir in beans
3) Pour in ale, bring to boil and cook over high heat for five mins. Add stock, reduce heat and simmer gently for 20 - 25mins, stirring occasionally (until thickens). Season with salt and pepper.
