Salad5 cups spinach or mixed baby greens1/2 cup sliced strawberries1/2 cup whole green grapes1/3 cup dried cherries1/4 sliced almondsDressing1 T plus 1 t balsamic vinegar2 t pineapple juice
Using egg slicer to cut even slices of strawberries, mix together with washed spinach, almonds, cherries and green grapes.
Toss in the pineapple juice and balsamic vinegar.

This is a very good fruit salad recipe. The addition of greens to the fruit slows down the absorption of the fruit sugars. We add sliced organic celery to our fruit salad. You can't taste it and it adds an interesting crunch. The natural saltiness of celery enhances the flavours of the fruit too. - 7/29/14
