lemon rice soup

Ingredients
8 cups chicken broth8 oz boneless skinless chicken breast1 cup orzo/long grain white rice4 eggs seperated3 lemons juicedpepper to taste
Directions
simmer chicken breasts in chicken broth 20 minutes or until can easily shred the meat.

remove chicken from broth shred and set aside

add orzo to boiling broth, cook until soft

separate egg yolks from whites

beat whites until soft peaks

beat egg yolks into whites

juice lemons and add juice to broth and orzo

slowly beat 2 cups hot broth into egg white mixture whisking all the time to prevent curdling

slowly whisk egg white broth mixture back into simmering broth

add shredded chicken in
