Bran Rusks

500 g self raising flour1 pinch salt3 cups coconut/weetbix/etc1 cup raw sugar5 tsp baking powder100 ml sunflower seeds50 ml linseeds1 egg125 ml oil125 g butter (melted)300 ml buttermilk5 ml vanilla essence
1. Preheat oven to 180'C
2. Mix all the dry ingredients in a large mixing bowl
3. Add the wet ingredients and mix until mixture comes together
4. Push mixture into the baking pan until even.
5. Mark out and cut shapes of rusks
6. Bake for 35 - 40 minutes or until a scewer comes out clean.
7. Let it cool on drying racks
8. Once cooled, dry out at 95'C (fan forced) for 8 hours+ until dry.
Serving Size: Makes approximately 33 rusks
