Egg & protein breakfast muffins

Ingredients
1 cup egg-whites2 large eggs6 Tbsp Vi protein powder or other protein powder (vanilla)1/2 tsp baking powder1 - 8oz bag of 2% cheddar cheese1/4 c. Hormel bacon bits (packaged)1 1/2 c. fresh spinach, chopped2 Tbsp Olive oil (optional)
Directions
Whisk first 4 ingredients together; mix in remaining ingredients. Spoon into 12 greased or sprayed muffin tins; bake at 400 degrees 15 - 20 minutes.
