Beef Fried rice

Ingredients
1 lb Stew beef1 cup Carrots, diced2.0-3.0 Potatoes, diced2 Eggs, scrambled2 tbsp Soy sauce1 cup White rice2 tsp olive oil1 small onion, diced
Directions
Cook rice per package instructions.
Dice carrots and potatoes. Scramble eggs
Saute beef and set aside
Saute vegetables and onion in olive oil 5-7 minutes
Mix vegetables, beef, eggs. Add in soy sauce. Saute on soy sauce for 2 minutes. Mix in rice.
Cook on medium heat until vegetables are tender
