Cod Pie

Ingredients
Cod 600g Cheese 100g Double cream 200ml Potatoes 800g (Raw Weight) Carrots 150g Onion 100g Olive Oil 2tsp English Mustard 1tsp Lemon Juice 1/2 lemon Flat leaf Parsley 60g Onion 100g Salt & Pepper
Directions
Peel, cut and boil potatoes.
Cut the cod into large chunks and place in bottom of dish.
Dice Carrot & Onion and fry gently in the olive oil.
Grate the Cheese.
When onion & carrots are softened add the cream and bring to boil then remove from the heat.
Add the lemon juice, mustard cheese and chopped parsley.
Spread over the cod.
Mash the potatoes add salt & pepper and a little cream or butter if you are not watching the calories.
Spread potatoes over fish. Bake at 180-200c for 45 mins. Take out of the oven and let it rest for 5 mins before serving.
