Oatmeal Date Muffins

Ingredients
1 cup rolled oats1 cup buttermilk1 cup chopped dates1/4 cup vegetable oil1/4 cup molasses1 egg1 cup whole wheat flour1 tsp baking powder1/2 tsp soda1/2 tsp salt
Directions
Combine oatmeal, dates and buttermilk in a large bowl.
Stir and let soak for about an hour. Add oil, molasses and egg and stir well. Mix together dry ingredients and stir into wet ingredients, just until mixed. Divide into 12 muffin cups. Bake 15-18 minutes in 400 degree oven.

Serving Size: Makes 12 regular size muffins.
