Salmon Spinach Salad for 2

Ingredients
6 oz Salmon, with skin2 cloves garlic, sliced1 tsp dried Basil1 tsp coconut oilJuice 1/2 lemon6 cups baby spinach, washed & divided into two large bowls1/2 cup grape tomatoes, divided into 2 1 large carrot, sliced or grated (to taste) divided into 21 Haas avocado (yes it matters!), sliced thin & divided into two portionsLemon wedges for dressing
Directions
Melt coconut oil & add slices of garlic.
Divide salmon into two servings, sprinkle basil on flesh side & place skin side up over garlic/oil in pan. Squeeze lemon over & cover on med/low heat until no longer dark ... until fish is done. Remove skin & break over greens while hot. Squeeze additional lemon over top & enjoy!
