Greek Yogurt-Oatmeal Pancakes

Ingredients
Directions
1/2 cup oats1/2 cup fat-free Greek yogurt 4 egg whites1/2 tsp baking powder1/2 tsp vanilla1 t sugar 1/2 tsp cinnamon
Blend everything except the oats. Once you have a smooth liquid, add the oats and blend until just mixed (you want the batter to be a little lumpy).
Let the batter rest for 5 minutes.
Coat a skillet with nonstick spray, then place over medium-high heat. Add 1/4 cup batter to the pan at a time, flipping when the pancake starts to bubble.
Serves 2. (4 pancakes per serving)
Top with fruit and vanilla yogurt.

I really thought it was going to be a fail of EPIC proportions. Started mixing things when I realized I had NO vanilla or cinnamon?? A staple in EVERY house, right? So went with caramel extract and cocoa powder, and BAM. Awesome breakfast! Textures more like Swedish pancakes. :) - 10/1/14

I made this for breakfast today, but I cut the recipe in half since it was just me. I didn't use a blender, instead I just combined the ingredients till smooth, added the oats and let it sit for about 15 minutes and then cooked them up and they were really good. Will try grinding oats next time - 6/13/17

Great pancake, cooked low and slow and it was great. I don't use blender, Use Mccanns quick oats and let sit 5 minutes or so. Could eat these everyday., they are light and wonderful while having great texture. They combine some of my favorites, Yogurt and oatmeal. Thankyou for a winner. - 12/7/16
