PrairieHarpy's MegaChocolate Protein Fudge

Ingredients

2.5 scoops Lean Dessert Chocolate Protein powder. (Your favorite chocolate protein powder will likely also work. Keep it lower cal and carb.)4 tbsp butter6 oz Philadelphia Neufchatel2.5 squares Girhardeli Baking Chocolate. (Your favorite baking chocolate will probably work here... keep it sugar free.)1 tsp Pure Vanilla extract.
Melt chocolate and butter in saucepan over low heat, stirring occasionally until just melted to a smooth blend.
Remove from heat, let cool for 1 minute, then add the rest of the ingredients.
STIR STIR STIR. It will seem impossible at first, but if you keep at it, I promise you will end up with a nice chocolatey fudgy texture. Switch hands now and then to get resistance training in both arms. :)
Now you can put the whole thing into a tupperware container in the fridge and just take a spoonful out once a day, or you can shape it and put it in the freezer to make really decadent fudge pieces. Or you can refrigerate and then shape and freeze. That might be a little easier. The longer it sits in the cold, the better it gets!
This is NOT a low calorie food. Eat it in moderate amounts and preferably only when you need a protein bump or are just dying for some chocolate.
I find the Lean Dessert adds a creaminess that other protein powders don't, but not so much that using your own preferred brand will ruin anything. Be experimental!
