Applesauce Oatmeal Bran Muffins

1 1/4 c. Unbleached, unenriched bread flour (can sub. all-purpose flour)1 c. quick-cooking oats3/4 c. wheat bran2 tbsp. flaxseed, ground1/2 c. Splenda brown sugar blend1 tsp. ground cinnamon1 tsp. baking powder3/4 tsp. baking soda1/4 tsp. salt1/2 c. raisins1 1/3 c. applesauce, unsweetened1/2 c. skim milk2 egg whitesCooking Spray
Preheat oven to 375°.
Combine flour and the next 8 ingredients (flour through salt) in a medium bowl. Stir in raisins; make a well in center of mixture. Combine applesauce and next 2 ingredients (applesauce through egg); stir well with a whisk. Add to flour mixture, stirring just until moist. Spoon the batter into 12 muffin cups coated with cooking spray.
Bake at 375° for 18 minutes or until the muffins spring back when touched lightly in center. Let cool 1-3 mins,; remove from pans; cool on a wire rack.
Note: Muffins can be frozen in ziploc freezer bag for up to 1 month.
Yield: 1 dozen (serving size: 1 muffin)
