Vegan Chocolate Pudding

Ingredients
1 1/2 cups soy or rice milk3 Tablespoons cornstarch1/4 cup cocoa powder1/4 cup maple syrup1/4 teaspoon vanilla extractUse measurements from the recipe. This recipe comes from the Getting Started Vegetarian Guide.
Directions
In medium saucepan over medium heat, combine all ingredients leaving the vanilla for last. Once mixture is combined and smooth consistency. Stir constantly to avoid sticking to the bottom. Stir in vanilla and keep stirring until the mixture thickens to a pudding like consistently, then pour into dessert glasses or a plastic bowl and refridgerate until throughly cold, and serve. Makes 4 servings.
