Ingredients
3 cups cubed seedless watermelon1/4 cup thinly sliced red onion2 tablespoons extra virgin olive oil1 tablespoon white wine vinegar1 teaspoon honey1/4 cup crumbled feta cheese2 tablespoons small fresh mint leaves
Directions
Combine watermelon and onion in a large
bowl. Whisk together oil, vinegar and honey;
toss with melon mixture. Sprinkle with feta and
mint.
