Spicy Skillet Scramble

Ingredients
2 large eggs2 oz. ground chorizo¼ cup chopped white onion¼ cup chopped bell pepper (any variety; red, yellow, or orange)½ tsp. jalapeno pepper, seeded and finely chopped (use 1 tsp. for more spice/heat)Salt and Pepper to tasteCooking Spray
Directions

In a bowl whisk eggs until blended and set aside. Mist a skillet with cooking spray and set over med-high heat. Add chorizo, onion, bell pepper, and jalapeno pepper. Cook , stirring slowly, for 5 minutes, or until chorizo is browned through.
Slowly add your eggs and continue to stir with a rubber spatula or wooden spoon until eggs are scrambled. Remove from heat, season with salt and pepper, and serve.
