1 can chicken broth (I used low-sodium)1 can water (refill broth can)3 cups V-8 juice (I used low-sodium V8 or even tomato juice, homemade or store bought)2 cans Italian diced tomatoes1 small onion2 cloves minced garlic2 package sliced mushrooms3 medium carrots, peeled and sliced1 zucchini, diced1 yellow squash, diced2 cups fresh or frozen green beans1 can kidney beans, drained and rinsed3 cups chopped kale1 tsp. Italian seasoningSalt and Pepper to taste
Combine all ingredients in a crockpot and cook on high for 2-3 hours or low for 4-6.
