French Onion Soup--LowCarb

4 large onions (not the sweet varieties)8 cups beef broth1/4 cup country crock5 oz mozzarella cheese5 tbsp parmesan cheese
Slice onions in a food processor, with a mandolin, or finely with a knife. Saute in butter until golden (don't over-cook). Add broth and let simmer for 30-35 minutes. Ladle into bowls and top with cheeses.
