Quinoa Meatloaf

Ingredients
610g (1.34lb) organic ground beef1/2 green bell pepper, diced2 small portabella mushrooms, diced1/2 cup quinoa (cook according to package directions)2-4 tablespoons Earthfare Organic Ketchup
Directions
Preheat oven to 375. Combine all ingredients in mixing bowl, making sure quinoa is evenly distributed (it tends to clump). (reserve 2 tbs ketchup to top)

Form into loaf in 8x8 glass dish and top with ketchup, if desired. Bake for 35 minutes, or until juices run clear.
