2 Pita Bread Rounds1 16oz. can of Fat Free Refried Beans1 Tbsp. Pesto1 Tbsp. Balsamic Vinegar1/4 Cup minced Scallions1/4 Cup chopped Red Onion1 Tsp. Minced GarlicTT SaltTT Pepper4 Tbsp. Fat Free Sour Cream4 Tbsp. shredded Cheddar Cheese1 Sliced Avacado
Makes 4 sandwiches
Mixed together the pesto, balsamic vinegar, scallions, red onions, garlic, salt and pepper. Place can of refried beans in a small pot, over medium-low heat. Add the mixture to the beans and stir well, let sit over heat until warmed through out, stirring often. Place pitas in microwave and warm for a minute and a half. Slice pitas in half, open pocket and put 1 Tbsp. of the sour cream and 1 Tbsp. of the cheddar cheese inside. Add a few slices of avacado to the side and place a 1/2 Cup of the refried bean mixture to the inside of the pita. Serve immediately.
