Homemade "Chocolate and Peanuts" Protein Bar

1.5 cups oats1 cup all bran cereal7 scoops whey protein isolate (vanilla)2 tbsp unsweetened shredded coconut2 tbsp Qi'a cereal or 2 tbsp chia seeds1 mashed banana1/4 cup unsweetened applesauce4 tbsp nut butter1/4 cup melted butterTopping1.5 oz (~1/4 cup) dry-roasted peanuts1 cup melted chocolate chips
Mix ingredients together and press into a 9X13 pan lined with lightly greased parchment paper.
Melt chocolate chips in microwave (30 sec in microwave, stir, another 30 sec in microwave, stir). Press peanuts into the top and spread melted chocolate over top. Cover and refrigerate for 2 hr. remove from pan, peel off parchment paper and cut into 16 bars. Keep in fridge for up to 2 weeks (these bars also freeze well!).
