American Goulash

1 Lb Beef Ground1 Tsp Canola oil 1/2 C Onion Chopped1 C Carrots Chopped3/4 C Celery Chopped1 C Bell Pepper Green Chopped1 Tbsp Parsley Dried1 Tbsp Paprika 1 Tsp Garlic granulated dried1/2 Tsp Salt 1/2 Tsp Black pepper 15 Oz Tomatoes Diced canned3 C Water 1 C Green Beans frozen1 C Lima Beans frozen1 C Corn frozen1 C Peas frozen1 C Zucchini fresh ChoppedSalt & Black Pepper to taste10 ounce Velveeta Cubed
Brown BEEF in pot, drain, remove to bowl lined with paper towels.
Add OIL to pot then ONION, CARROTS, CELERY, sauté, stirring until onion is soft. Add BELL, sauté 5 minutes.
Stir in PARSLEY, PAPRIKA, GARLIC, SALT, PEPPER. Add TOMATOES and WATER, scraping bottom of pot. Add more WATER if needed to almost cover ingredients. Increase heat to medium high.
When boiling add REMAINING vegetables and reserved BEEF. Return to boil then reduce heat to medium low. Cover and simmer 15-20 minutes or until vegetable are desired tenderness. Add more water or TOMATES if desired. Stir. Taste and adjust seasonings.
Distribute CHEESE cubes over top. Cover, cook on low until melted.
