Heat oil in large pot. Add onions, scallions, carrots, celery, green pepper, cabbage, mushrooms, and garlic. Saute 5 minutes or so, add tomatoes, broth, water, apple cider vinegar, liquid aminos, and all the seasonings. Bring to a boil and let cook until,veggies are tender. Readjust seasonings as desired.
