Basque Stew with Couscous

Ingredients
1 small eggplant, diced1 small butternut squash, diced1/2 bag baby carrots1 c. diced sweet onion1 can diced tomatoes, drained1 can chickpeas, drained1/4 c. spinch, packed and shredded1 T. tahini4 t. minced garlic1 t. olive oil1 t. lemon juice1/2 t. paprika1/2 t. curry1/2 t. ginger3 T. cuminsprinkle Adobo seasoningNear East Roasted Garlic Couscous, prepared
Directions
Oven 350F
Roast first four ingredients on PAM-coated bake sheet, turning frequently until tender ~30min
In a stockpot, combine remaining ingredients, adding roasted items upon completion of roasting
Set pot to med and cook all until warmed hot and fragrant
Serve hot with scoop of couscous on side.
