Ingredients
1/2 can Pumpkin puree1/2 cup Vegetable oil1 egg1/4 cup Unsweetened applesauce1 3/4 cup Stone-ground whole wheat pastry flour1 cup Splenda1 tsp Baking soda1/2 tsp Baking powder3/4 tsp Salt3/4 tsp each of Ground allspice, nutmeg and cinnamon1/4 cup Walnuts, chopped (optional)
Directions
1. Preheat oven to 350F. Grease a 9x5 loaf pan
2. Combine pumpkin, oil, egg, and apple sauce. Sift together dry ingredients. Combine the two mixtures, blending thoroughly.
3. Pour into the loaf pan and bake for 1 hour.
