Hearty Beef & Vegetable Stew

Ingredients
1 lb. top round beef 1 tablespoon paprika1-1/2 teaspoon oregano 1/2 teaspoon chili powder1/4 teaspoon garlic powder1/4 teaspoon black pepper 1/8 teaspoon red pepper 1/8 teaspoon dry mustard 8 red-skinned potatoes, halved 3 cups finely chopped onion 2 cups beef broth 2 large garlic cloves, minced2 large carrots, peeled, cut into very thin 2-1/2-inch strips 2 bunches mustard greens, kale, or turnip greens, stems removed, (1/2 lb. each) coarsely torn as needed nonstick spray coating
Directions
1. Partially freeze beef. Thinly slice across the grain into long strips 1/8" thick and 3" wide.

2. Combine paprika, oregano, chili powder, garlic powder, black pepper, red pepper, and dry mustard. Coat strips of meat with the spice mixture.

3. Spray a large heavy skillet with nonstick spray coating. Preheat pan over high heat.

4. Add meat; cook, stirring for 5 minutes.

5. Add potatoes, onion, broth, and garlic. Cook covered, over medium heat for 20 minutes.

6. Stir in carrots, lay greens over top, and cook, covered, until carrots are tender, about 15 minutes.

7. Serve in large serving bowl, with crusty bread for dunking.

    My husband and I really enjoyed this. I added some canned mushrooms and used fresh spinach added toward the end of the cooking. It turned out like a stew, I might try adding other veggies and less potatoes to cut down on the carb count. Very Yummy! - 4/13/09

    WOW! This was FABULOUS! I love the spice mixture; perfect for beef.
    The only changes I made were to use only a tsp of oregano, cut the potatoes into bite-size & not add the kale on top til after everything else was done cooking. I put kale on top, covered & let cook til just starting to wilt. - 5/21/08

    This was a delicious traditional beef stew. Chard made a great green. Since the stem takes longer to cook than the leafy part, I sliced the stem separately and added it in about 10 minutes before I added the greens. - 11/12/08

    This was very good, just a bit hot (have water handy). It was actually our 1st time having Kale greens and we were all pleasantly surprised. It was even better the next day warming up leftovers. Mine turned out to be 8 (1 cup) servings at 300 calories. - 5/18/09

    I made this exactly as described. It was nice for a change, but probably not one I will make again. I did notice that potatoes are not listed in the nutrient list (but red pepper is) and that the amount of beef per serving is off: 5 oz. x 6 servings = way more than the 1 lb. of beef listed. - 10/3/09

    Very tasty! We all enjoyed it!
    I added 1/4 cup of spicy duck sauce and 1tbs cornstarch dissolved in water to thicken the sauce.
    Served it with fresh steamed green beans! Yum! - 8/16/07

    I found a recipe very similar on a cancer site. I made it for a friend who is having cancer treatments. She and family loved it. I made it for my family and added some more broth and vegies and made it into vegie soup. We thought it was the best we ever had. - 5/15/09

    delicious as is!!! used frozen turnip greens with chunks of turnips, matchstick carrots--cut the potatoes in half and made 4 servings, was a whole meal! made again with pork tenderloin and chicken broth--just as good!!! thanks for this :) - 10/16/09

    to be honest I don't use the top round roast I use tender loin. I also don't use the oil or fry the meat.

    Superb dish! Hardy and filling. The combinations of ingredients and flavors make it worth the wait. We used kale as the green ingredient, and the results were excellent. Next time we make it, we will use smaller red potatoes. Definitely it should be served with crusty bread. - 5/16/09
