Shrimp stir fry with mai fun noodles

Ingredients
1.0 1tsp Coconut Oil6.0 oz Shrimp, raw, cleaned 1/4 cup of Tamari Soy Sauce 1.0 serving Annie Chun's Maifun rice noodles1 bag frozen Pepper and Onion Stir-Fry 2 Tbsp Unsweetened Flake CoconutMinced ginger, minced garlic, red pepper flakes to taste (I suggest 1 tsp garlic and ginger, a sprinkle of red pepper)
Directions
Follow Mai Fun package instructions. Heat coconut oil in wok on medium to medium high heat. Saute ginger and garlic until browned. Add pepper and onion stir fry. Saute until veggies are soft and onions start to brown. Add raw, defrosted tailless shrimp, coconut, and red pepper flakes. Cook about 3 minutes or until shrimp are pink all through. Turn off heat. Add soy sauce and drained Mai Fun noodles. Mix and serve. Serving Size: 1/2 of the wok
