Poached Dolphin Fish (Mahi Mahi) with Lemon Pepper

Ingredients
1 lb. Mahi Mahi (Dolphin fish) fillets1 tsp. Mrs. Dash Lemon Pepper Seasoning2 Tbsp. lime or lemon Juice1 Tbsp. salted butter1/2 c. water
Directions
Sprinkle both sides of fillets with Mrs. Dash. Melt butter in skillet over medium heat. Add fillets and cook 1-2 minutes on each sides Add juice and water, cover, and cook about 5 minutes or until fish is no longer translucent and begins to flake. Remove fish from pan and cook remaining liquid to reduce by half. Pour resulting sauce over fish and serve.
