1 pound medium shrimp1/3 cup Italian dressing8 ounces linguine fini1/4 cup chicken broth2 tbsp minced fresh cilantro2 tbsp chunky style peanut butter1 tbsp honey1 tbsp soy sauce1 tsp minced ginger root1/2 tsp crushed red pepper flakes1 cup julienned carrots1 cup chopped scallions2 tbsp canola oil1 tbsp sesame oil
In lg ziplock bag, combine shrimp and dressing. Refrigerate at least 15 mins.
Cook pasta according to package instructions.
In a small bowl, comine broth, cilantro, peanut butter, honey, soy sauce, and pepper flakes, set aside.
In large skillet, saute carrots and scallions in canla oil and sesame oil for 2-3 mins or till crisp-tender.
Add shrimp and dressing to vegetables; cook for 2-3 mins or till heated through. Drain pasta and place in a large bowl. Add shrimp mixture and peanut butter mixture; toss and coat and serve!
