Peanut and Sesame Noodles

Ingredients
  • 2 cups of cooked whole wheat spaghetti
  • 1 tablespoon sesame oil
  • 3 tablespoons smooth peanut butter
  • 1 tablespoon fresh ginger, chopped
  • red pepper flakes to taste (approx. 1 teaspoon)
  • 3 tablespoons hot water
  • 1 garlic clove, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon apple juice
  • 1 tablespoon toasted sesame seeds
Directions
1. Cook spaghetti as directed by the manufacturer.



2. Combine all other ingredients, mix until peanut butter is dissolved.



3. Add sauce to drained pasta, toss until pasta is fully coated.



4. Sprinkle with toasted sesame seeds.



Serves 4.

    I added a few green onions and two finely chopped carrots to the recipe. It was pretty good, but I think it would be better if you use a "natural" peanut butter that doesn't have so much sugar in it, because it turned out almost too sweet, and I didn't even use the applejuice. - 6/25/07

    These were awesome. I don't care much for spaghetti but my husband loves all pasta. I was surprised at how delicious these were.     I couldn't tell that the recipe called for "sweet" peanut butter - I always use natural peanut butter (just peanuts and oil, or some will also add salt), so that's what I would try with this, and I bet it will be DELICIOUS!! - 8/27/10
