Shrimp, Broccoli, and Garlic Dinner

8 jumbo shrimp (about 1 oz each); 1 tbsp olive oil; 1 tbsp minced garlic; 2 and 1/2 cups frozen broccoli florets, preferably the "steam in the bag" kind; seasoning (I use Essence of Emeril and dried parsley.)
Makes 1-2 servings.
Peel and de-tail raw jumbo shrimp.
Place "steam in bag" broccoli in the microwave. Most varieties call for 6-7 minutes on high in the microwave.
While the broccoli is steaming, Heat olive oil in pan over med-high heat. Add garlic. Saute 1-2 minutes. Add shrimp. Season shrimp. Saute 3-4 minutes, or until they have all JUST turned pink.
Remove from heat until broccoli is done steaming. Carefully remove broccoli from microwave and dump half the package into the pan. (A whole package usually contains 5 cups of broccoli.)
Stir broccoli and shrimp together, season again if desired.
This will serve 1 to 2 people. (I make it once and eat it twice!) Also, recipe doubles easily.

This recipe was on the table in less than 10 minutes and my picky husband liked it alot! I used frozen but already cooked shrimp, salt-free garlic and herb seasoning and fresh steam in the bag broccoli. I tossed the shrimp broccoli mixure with couscous and made enough for my whole family - awesome! - 6/29/08
