Strawberry Banana Bran Bread

Whole Wheat Flour, 3/4 cupRye flour, light, 1/2 cupWheat bran, 1/4 cupOat bran, 1/4 cupWhite flour, 1/8 cupBaking Soda, 1 tsp Baking Powder, 1 tsp Ginger, ground, .5 tspCinnamon, ground, 1.5 tsp Nutmeg, ground, .5 tspEgg white, 2 serving or 2 tsp Ener-g egg replacer (used in this nutrition calculations) Dannon Light & Fit Nonfat Vanilla Yogurt, 1/2 cup (or soy vanilla yogurt, 1/2 cup, used in this nutrition calculations)Vanilla Extract, 2 tsp Sugar or Splenda Granular, .75 cup Banana, fresh, 1 medium (7" to 7-7/8" long)Applesauce, unsweetened, 1/4 to 1/2 cupStrawberries, frozen, unsweetened, 3/4 cup, thawed
Preheat oven to 350ºF. Spray eight inch loaf pan with cooking spray.
Mix flours, brans, Splenda or sugar, baking powder, baking soda, cinnamon and nutmeg in a bowl. Add Egg Beaters/egg whites/egg replacer, applesauce, and mashed fruit. Blend only until ingredients are combined, batter will be very thinck. Pour into prepared loaf pan. Bake for 35-40 minutes, until toothpick entered into center of loaf comes out clean. Cool 10 minutes and then turn onto wire racks to cool completely. Loaf should be sliced into twelve slices. This bread freezes well.
