Edamame Hummus

Set 1 tablespoon of edamame aside for garnish (if you like). Place the rest of the edamame, tofu, salt, garlic, oil, lemon juice, and cumin in the bowl of a food processor and process until very smooth (about 2 min).
Season with additional salt and pepper, plus more lemon juice if desired. Remove to a serving bowl and garnish with reserved edamame and some cumin if desired.
Serve with raw veggies (bell pepper strips, carrots, broccoli, cauliflower, celery, cherry tomatoes...etc...) or pita chips.
I calculated the portion sizes for 9 portions, which works out to a little over 5 1/2 tablespoons per serving.
