SMASHED (not mashed) Potatoes... boiled and baked

1 serving White Potato - Small Boiled with skin
1 serving Pam - Olive Oil Cooking Spray (by PEARSONDEB)
.5 tsp Cheese-Parmesian Kraft
Boil cleaned small Yucon Gold potatoes or Small white potatoes in a sauce pan covered with water for 10 minutes or more according to the size of your potatoes. Potatoes should be completely done. Drain potatoes. Preheat oven to 400° while you prepare your baking sheet with a good spray of Pam or other spray oil to cover your baking sheet. Place your potato on the baking sheet with enough space between each so when you smash them they will not touch. Take a heavy coffee mug and smash your potato flat. Not too hard or you will have potato in your hair. If you don't hit it hard enough you may have to whack it twice. Spray the tops with a light coating of spray..... and top with a sprinkle of Parmesan Cheese . Place in hot oven for 10 to 15 minutes or until they are golden around the sides and atop. Enjoy. Saw this on one of those cooking shows ... Food network.... and just had to try it.
