Tomato, Cucumber + Red Bean Salad

Ingredients
1 tomato, chopped1 cucumber, seeded & chopped (English pref)1/4 cup thinly sliced red onion1/4 cup canned kidney beans, rinsed1.2 cup firm tofu, diced2 tbsp chopped fresh basil2 tbsp balsamic vinegar*4 tbsp olive oil*sea salt to tastepepper to taste*Can substitute 1/4 cup balsamic dressing
Directions
In a large bowl, combine tomato, cucmber, onion, beans, tofu and basil and toss. Add salt and pepper to taste.

In a small bowl, combine oil and vinegar.

Toss with dressing just before serving.
