Ingredients
One Salmon FilletFresh Spinach LeavesSun-dried Tomato PestoPineNuts (if desired)Lemon wedges
Directions
Preheat oven to 450 degrees. Make a horizontal cut into the salmon fillet (butterfly the fillet). Coat the inside with the pesto, then add spinach leaves, and pinenuts if desired. Bake at 450 degrees for about 15 minutes, or until salmon is done. Serve with lemon garnish.

I like to serve this dish with brown rice and steamed veggies!
