Soy Sauce and Mustard Salmon Fillets

1/2 fillet of Atlantic Salmon, fresh or frozen (thawed)1 tbsp Soy Sauce1 tsp Dijon mustard
Place the uncooked salmon patty on a broiler pan and turn oven broiler on high. Take the dijon mustard, and with a pastry brush, brush the entire top of filet. Next, drizzle soy sauce on top. Place oven rack as high as it can go (approx. 1 inch below broiler heating element). Keep an eye on the filet and it is done when the top turns a dark brown color and starts to sizzle, or about 10 minutes. It is a tasty, low calorie, good fat meal. The salmon will have a ton of flavor and a slightly crispy top. I serve with steamed broccoli or brown rice.

HERCKLE
I used a 4 1/2 oz filet of salmon (with skin on one side) and was a little scared about the cooking time under the broiler in the position recommended. I cooked it about 7 minutes total, and although it still had good flavor, was a bit dry. I'd fiddle with the positioning and cooking time next time. - 6/21/07
