Spicy Herbed Cauliflower Cheese

1 medium head cauliflower, chopped1/4 cup skim milk powder3 tbsp flour1/4 tsp salt1/2 tsp garlic powder1/2 tsp oregano1/4 tsp basil1/4 tsp cayenne pepper1/8 tsp coarse ground black pepper1 1/2 cups skim milk1/3 cup shredded low-fat old Cheddar1 tbsp Dijon mustard
Steam the cauliflower until just tender, 3 - 4 minutes. Transfer to a medium bowl and keep warm.
In a medium saucepan, whisk together the dry milk powder, flour, salt, herbs and spices.
Place pan over medium heat, and slowly whisk in the skim milk until no lumps remain.
Cook, whisking, over medium heat for 5 minutes.
Stir in the cheese and cook until melted.
Whisk in the mustard.
Pour sauce over the cooked cauliflower in the serving dish and toss to combine well.
Serve immediately.

I will certainly make this again; it's the first cauliflower I ever liked! The only change I made was to serve the sauce on the side. We had over half left over, and each serving went down to about 65 calories!! I froze the leftover sauce in an ice cube tray to be used in small bits later. - 1/1/09

I made this for the family. I rather over did the cayenne pepper but it was delicious even though a bit strong. Even our 8 yr old loved it. I haven't made a white sauce without butter before but it worked well. I added a bit more cheese on the top and cooked some bacon to go with it. Delicious! - 2/21/11
