Fruity Sweet Potato Oat Bars

Ingredients
1 sweet potato, baked, skinned1 1/2 c. quick oats1/2 c. Bisquick or other baking mix1/3 c. light brown sugar2 Tbsp. honey2 Tbsp. strawberry preserves, sugar-free w/Splenda1 egg1 Tbsp. cinnamon1/2 c. tropical trail mix1/2 c. diced prunes or raisins
Directions
Preheat oven to 400 degrees. Mix all ingredients together. Line a 8" X 12" pan with tin foil and spray lightly with cooking spray. Spread mixture into pan. Bake 15 minutes. After the mix cools, pick it up out of pan holding the sides of foil. Cut into 16 bars. Freeze remaining bars for quick snack later.
