Spinach Scramble

0.2 oz onions, raw, purple/red (1 slice) 1 large Egg, fresh, whole, raw 1 medium whole (2-3/5" dia) Tomatoes, red, ripe, raw, year round average 1 cup Spinach, fresh 1 oz Feta Cheese
Melt a tbsp or so of butter, or whatever you like to use, in a pan. Add the onions and saute until soft, and starting to become translucent. Then add the egg. I found it seems to work easier if you mix up the egg in a bowl, and then pour over the onions. Mix well.
Just before the eggs are done, add tomatoes and stir. Then I add a handful of fresh baby spinach. I tear the handful as I add it, but I suppose you can just add the spinach whole, as baby spinach leaves are rather small. Mix the mixture up well.
Last, add about two tbsp of feta cheese, or whatever you choose.
Enjoy this with a good cup of coffee and perhaps a half toasted bagel or slice of toast.
