24 oz Mahi Mahi 1 cup All-Purpose White Flour 1/4 cup Arrowroot flour (or cornstarch)1/2 cup Yellow Cornmeal 1 cup Peanut Oil (or vegetable oil)2 Large Eggs2 Tbsp cold waterSalt & pepper to taste
Place fish on paper towels to absorb moisture. Meanwhile, throughly mix flour, arrowroot and cornmeal together in bowl. In a separate bowl mix eggs with 2 Tbsp cold water. Season both sides of fish with salt & pepper. Add oil to fry pan (about 2 inches) and heat to 350 degrees. Dip fish in egg mixture then in flour mixture, shake off excess flour. Fry until golden brown flip and fry other side. Remove from pan and place on cooling rack or plate lined with paper towels. Season with salt & pepper again. Do not crowd fish; may need to fry in batches.
