1/2 tsp Garlic powder 1/2 tsp Pepper, black 1 lb Boneless Pork Loin cut into 1/2" pieces3 cloves Garlic, minced1/2 medium Onions, chopped4 cups diced Sweet potato 1 tbsp Extra Virgin Olive Oil 1 tsp Better than bouillon chicken 4 tbsp Argo Cornstarch 28 oz can Green Chili sauce 3 cups Chicken Stock 7oz can Diced Green Chilies (or 4oz mild & 4oz med)*Optional ~ not included in nutritional info15.5oz can Hominy, drained14.5oz can Fire Roasted Diced Tomatoes
* Combine the pork, cornstarch, pepper and garlic powder in a gallon size ziploc bag. Shake to coat thoroughly and set aside. In a large pot over medium heat, heat the oil. Add the garlic and onion and saute until translucent, approximately 2-3 minutes.
*Add the dusted pork and cook until browned, approximately 5 minutes. Add the chilies, green chili sauce, stock and bring to a boil. Cover and simmer on low for 45 minutes.
*Add the potatoes (hominy & tomatoes, if using) and raise the heat to boil. Reduce to simmer and cook until the potatoes are tender, approximately 15 minutes.
Serving Size: 4 servings
